{Wine was never meant to stand alone}

It was meant to be enjoyed with food. Yet when wine is evaluated and ranked by the pros, in palate-busting tastings that often involve dozens of wines, food is rarely part of the equation. The result is that big wines with fat flavor profiles rate high. But these same highly praised wines often rate low when paired with food. Hence, paiRED: this blog comes at wine tasting from a different perspective. We'll pair specific wines with selected recipes and make evaluations based on how well they worked together. We're putting our livers on the line.
